One-Pan Cranberry Rosemary Chicken

This One-Pan Cranberry Rosemary Chicken combines tender chicken breasts with fresh rosemary and tangy cranberries for a flavorful and easy weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 2 tablespoons fresh rosemary, chopped
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large ovenproof skillet over medium heat.
  3. Season chicken breasts with salt and pepper and sear in skillet until golden brown, about 3-4 minutes per side.
  4. Remove chicken and set aside. In the same skillet, add garlic and cook until fragrant, about 1 minute.
  5. Add fresh cranberries, rosemary, honey, and chicken broth. Stir to combine and bring to a simmer.
  6. Return chicken to the skillet, spooning some sauce over the top.
  7. Transfer skillet to the oven and bake for 15-20 minutes, until chicken is cooked through.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, serve with roasted vegetables or creamy mashed potatoes to soak up the delicious sauce.
