This One-Pan Chicken Lo Mein is a quick and easy weeknight dinner, combining tender chicken, fresh vegetables, and flavorful noodles all cooked together in one pan for minimal cleanup. A delicious and satisfying meal ready in under 30 minutes!

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces lo mein noodles
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 carrots, julienned
  • 2 bell peppers (any color), sliced
  • 1 cup broccoli florets
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a large skillet or wok, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from the pan and set aside.
  2. Add onion, carrots, and bell peppers to the skillet and cook until slightly softened, about 5 minutes.
  3. Add broccoli florets and garlic to the vegetables and cook for another 2 minutes until broccoli is tender-crisp.
  4. Return the chicken to the skillet. Add soy sauce, oyster sauce, sesame oil, ginger, and red pepper flakes (if using). Stir to combine.
  5. Add lo mein noodles to the skillet and toss to coat in the sauce. Add 1/2 cup of water to help cook the noodles, and cover the skillet.
  6. Cook for about 5-7 minutes, or until the noodles are cooked through and the sauce has thickened, stirring occasionally to prevent sticking.
  7. Garnish with sliced green onions and sesame seeds before serving.

Notes

For a vegetarian option, substitute the chicken with tofu or extra vegetables. Feel free to add other vegetables like mushrooms or snow peas.
