No-Bake Greek Yogurt Jello Cheesecake

A light and refreshing no-bake cheesecake made with creamy Greek yogurt and colorful jello, perfect for a quick and healthy dessert.

  • 1 cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon sugar
  • 2 (3 oz) packages flavored Jello (any flavor)
  • 2 cups boiling water (divided)
  • 2 cups cold water (divided)
  • 2 cups Greek yogurt (plain, full-fat or low-fat)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing filling.
  2. In two separate bowls, dissolve each package of Jello in 1 cup boiling water. Stir until completely dissolved.
  3. To each bowl of dissolved Jello, add 1 cup cold water. Refrigerate until jello starts to thicken but is not fully set (about 20-30 minutes).
  4. In a large mixing bowl, whisk Greek yogurt, powdered sugar, and vanilla extract until smooth.
  5. Gently fold half of the thickened jello from one flavor into the Greek yogurt mixture to create the first layer. Pour over the crust. Refrigerate until set (about 1 hour).
  6. Repeat step 5 with the second flavor of jello mixed into the remaining Greek yogurt mixture to create the second layer. Pour over the first layer and refrigerate until fully set (at least 3 hours or overnight).
  7. Remove the cheesecake from the springform pan and serve chilled. Optionally garnish with fresh fruit or whipped cream.

Notes

For a swirl effect, gently layer the yogurt and jello mixtures without fully blending. Use low-fat Greek yogurt to reduce calories without sacrificing creaminess.
