No-Bake Coconut Balls with Cream Cheese

Delightfully creamy and naturally sweet, these no-bake coconut balls with cream cheese are an easy, bite-sized treat perfect for any occasion.

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • Extra shredded coconut for rolling

Instructions

  1. In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, and honey/maple syrup (if using) until smooth and well blended.
  2. Add shredded coconut to the mixture and stir until evenly incorporated.
  3. Using your hands, shape the mixture into small 1-inch balls.
  4. Roll each ball in extra shredded coconut until fully coated.
  5. Place the coconut balls on a parchment-lined tray and refrigerate for at least 1 hour to firm up.
