No Bake Classic Woolworth Cheesecake

Enjoy a rich and creamy No Bake Classic Woolworth Cheesecake that’s smooth, luscious, and perfect for any occasion without turning on the oven.

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 600g cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup thickened cream
  • 2 teaspoons vanilla extract
  • 2 tablespoons lemon juice
  • Fresh berries, to serve (optional)

Instructions

  1. Crush the digestive biscuits finely using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
  2. Mix the crushed biscuits with melted butter until well combined.
  3. Press the biscuit mixture firmly into the base of a 23cm springform pan. Refrigerate for 30 minutes to set.
  4. In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
  5. In a separate bowl, whip the thickened cream and vanilla extract until soft peaks form.
  6. Gently fold the whipped cream and lemon juice into the cream cheese mixture until fully combined.
  7. Pour the cheesecake filling over the chilled biscuit base and smooth the top with a spatula.
  8. Refrigerate the cheesecake for at least 4 hours, or overnight, until set.
  9. Before serving, garnish with fresh berries if desired. Slice and enjoy!

Notes

For best results, chill the cheesecake overnight and serve with a drizzle of berry coulis or chocolate sauce for extra indulgence.
