  • 1 cup whole milk
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup Monterey Jack cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • Salt and black pepper to taste

Instructions

  1. In a medium saucepan, melt the butter over medium heat.
  2. Whisk in the flour and cook for 1-2 minutes until lightly golden to form a roux.
  3. Gradually whisk in the milk, ensuring no lumps form.
  4. Continue to cook and stir until the mixture thickens, about 3-5 minutes.
  5. Lower the heat and stir in the shredded cheddar and Monterey Jack cheese until fully melted and smooth.
  6. Add garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper; stir to combine.
  7. Remove from heat and serve warm with tortilla chips, vegetables, or your favorite nachos.

Notes

For a spicier twist, add diced jalapeños or a splash of hot sauce. This sauce can be stored in the refrigerator for up to 3 days and reheated gently with a splash of milk to restore creaminess.
