Mint Oreo Brownies

Delight in these rich and fudgy Mint Oreo Brownies, combining classic chocolate brownie decadence with refreshing mint and crunchy Oreo cookies for a perfect dessert treat.

  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 10 Mint Oreo cookies, roughly chopped
  • 1/2 cup (90g) semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  2. Melt the butter in a medium saucepan over low heat. Remove from heat and stir in sugar, eggs, and vanilla extract until smooth.
  3. In a separate bowl, whisk together cocoa powder, flour, salt, and baking powder.
  4. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
  5. Fold in the chopped Mint Oreos and chocolate chips gently.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Allow to cool completely before cutting into squares and serving.

Notes

For an extra minty kick, drizzle melted white chocolate infused with peppermint extract over the cooled brownies before serving.
