  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • 2 tablespoons chopped fresh basil, for garnish
  • Optional: 1/2 cup chopped spinach or kale

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken with Italian seasoning, salt, and pepper. Add chicken to the pot and cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. Stir in sun-dried tomatoes and cook for 1 minute.
  4. Pour in chicken broth and bring to a simmer. Return the chicken to the pot.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
  6. Stir in heavy cream and Parmesan cheese. If using, add spinach or kale and cook until wilted, about 2 minutes.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh basil and extra Parmesan cheese before serving.
