Marinated Olives and Feta Cheese

A flavorful Mediterranean appetizer featuring briny marinated olives paired with creamy, tangy feta cheese. Perfect for snacking or serving at gatherings.

Ingredients

  • 1 cup mixed olives (green, Kalamata, or black)
  • 100g feta cheese, cubed
  • 3 tbsp extra virgin olive oil
  • 1 garlic clove, thinly sliced
  • 1 tsp dried oregano
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1/2 tsp crushed red pepper flakes (optional)
  • Freshly ground black pepper, to taste
  • 1 sprig fresh rosemary or thyme

Instructions

  1. In a medium bowl, combine the olives and cubed feta cheese.
  2. Add the olive oil, garlic slices, dried oregano, lemon zest, lemon juice, and crushed red pepper flakes if using.
  3. Toss gently to coat everything evenly with the marinade.
  4. Add the fresh rosemary or thyme sprig for aroma.
  5. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow flavors to meld.
  6. Before serving, bring the olives and feta to room temperature and sprinkle with freshly ground black pepper.
  7. Serve as a flavorful appetizer with crusty bread or as part of a Mediterranean mezze platter.

Notes

For an extra touch, add a splash of red wine vinegar or a few lemon slices to brighten the flavors before serving.
