Maple Roasted Parsnips with Thyme

Sweet and earthy parsnips roasted to perfection with fragrant thyme and a drizzle of maple syrup, making a simple yet elegant side dish.

  • 1 lb parsnips, peeled and cut into sticks
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the parsnip sticks with olive oil, maple syrup, thyme, salt, and pepper until evenly coated.
  3. Spread the parsnips in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 25–30 minutes, turning halfway through, until the parsnips are golden and tender.
  5. Remove from oven and serve warm, garnished with additional thyme if desired.

Notes

For an added depth of flavor, sprinkle a pinch of smoked paprika before roasting or serve alongside roasted chicken or pork.
