  • 1 (2-pound) beef tenderloin, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the beef tenderloin dry and season generously with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the beef on all sides until browned, about 2-3 minutes per side.
  4. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, and thyme.
  5. Brush the maple Dijon glaze evenly over the seared beef.
  6. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  7. Remove from oven, brush with any remaining glaze, and let rest for 10 minutes before slicing and serving.

Notes

For extra flavor, marinate the beef in the maple Dijon glaze for 1 hour before searing. Serve with roasted vegetables or a fresh green salad.
