This creamy Mac and Cheese Soup is comfort in a bowl! It’s packed with cheesy flavor and tender pasta, making it a quick and easy weeknight meal that the whole family will love.

Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 8 ounces elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Cooked bacon crumbles for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth and milk. Bring to a simmer.
  3. Add elbow macaroni and cook according to package directions, or until pasta is tender.
  4. Reduce heat to low. Stir in cheddar cheese and Parmesan cheese until melted and smooth.
  5. Season with salt and pepper.
  6. Serve immediately. Garnish with bacon crumbles, if desired.

Notes

For a richer flavor, use sharp cheddar cheese. You can also add a pinch of red pepper flakes for a little heat.
