This Loaded Potato Meatloaf combines classic meatloaf flavors with creamy mashed potatoes and savory toppings for a comforting, hearty meal perfect for dinner.

  • 1 lb ground beef
  • 1 cup mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup ketchup (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, mashed potatoes, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Gently fold in cheddar cheese, bacon, and green onions.
  4. Shape mixture into a loaf and place in a baking dish.
  5. Spread ketchup evenly over the top of the meatloaf.
  6. Bake for 60 minutes, or until meatloaf is cooked through and internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing and serving.

Notes

For extra flavor, try adding a bit of smoked paprika to the meat mixture or serve with a side of steamed vegetables.
