Lemon Vinaigrette

This bright and zesty Lemon Vinaigrette is the perfect way to brighten up any salad or grilled vegetables. Made with fresh lemon juice and simple ingredients, it’s quick, easy, and adds a burst of flavor.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  1. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey (or maple syrup), minced garlic, salt, and pepper.
  2. Whisk vigorously until the vinaigrette is emulsified and well combined.
  3. Taste and adjust seasonings as needed. Add more salt, pepper, or honey to your preference.
  4. Use immediately or store in an airtight container in the refrigerator for up to 1 week.
  5. Before serving, let it come to room temperature and whisk again to re-emulsify.

Notes

For a richer flavor, let the vinaigrette sit for at least 30 minutes before serving to allow the flavors to meld. Try adding a pinch of red pepper flakes for a little heat.
