Lemon Vinaigrette Dressing

A bright and zesty lemon vinaigrette that perfectly complements salads with a fresh, tangy flavor and a smooth, balanced texture.

  • ¼ cup fresh lemon juice
  • ½ cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small bowl or jar, whisk together the lemon juice, Dijon mustard, honey, and minced garlic.
  2. Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
  3. Season with salt and freshly ground black pepper to taste.
  4. Taste and adjust sweetness or acidity if needed by adding more honey or lemon juice.
  5. Store in an airtight container in the refrigerator for up to one week. Shake well before each use.

Notes

For a creamier texture, add a tablespoon of plain yogurt or mayonnaise. This dressing pairs wonderfully with mixed greens, roasted vegetables, or grilled chicken.
