Lemon Raspberry Bars

Bright and fruity Lemon Raspberry Bars combine zesty lemon flavor with fresh raspberries in a buttery crust for a delightful, tangy dessert perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon lemon zest
  • 1/3 cup fresh lemon juice
  • 1 cup fresh raspberries
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine 1 cup flour and powdered sugar. Cut in the softened butter until mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan.
  4. Bake crust for 15 minutes or until lightly golden. Remove from oven and set aside.
  5. In a separate bowl, whisk eggs, granulated sugar, 2 tablespoons flour, baking powder, lemon zest, and lemon juice until smooth.
  6. Pour lemon mixture over the baked crust, then evenly scatter fresh raspberries on top.
  7. Bake for an additional 20-25 minutes, or until the filling is set and lightly golden on top.
  8. Allow bars to cool completely in the pan on a wire rack.
  9. Once cooled, dust with powdered sugar if desired, then cut into squares and serve.

Notes

For an extra burst of flavor, chill the bars before serving and garnish with fresh mint leaves.
