These Lemon Marbled Cheesecake Bars are a delightful combination of creamy cheesecake and bright lemon flavor. The beautiful marbled effect makes them perfect for any occasion, and they’re surprisingly easy to make!

  • For the Crust:
  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Cheesecake Filling:
  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ⅓ cup sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • Yellow food coloring (optional)

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of an 8×8 inch baking pan lined with parchment paper.
  2. Bake the Crust: Bake for 8-10 minutes, or until lightly golden. Let cool slightly.
  3. Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy. Beat in eggs one at a time, then stir in sour cream and vanilla extract.
  4. Add Lemon Flavor: Stir in lemon juice and lemon zest into the cheesecake filling.
  5. Create the Marble Effect: Divide the cheesecake filling into two bowls. Add a few drops of yellow food coloring (if using) to one bowl and mix well.
  6. Assemble and Marble: Drop spoonfuls of the plain and yellow cheesecake fillings randomly over the crust. Use a knife or skewer to swirl the fillings together, creating a marbled effect.
  7. Bake the Cheesecake Bars: Bake for 25-30 minutes, or until the edges are set and the center is slightly wobbly.
  8. Cool and Chill: Let the cheesecake bars cool completely in the pan, then chill in the refrigerator for at least 2 hours before cutting into squares.

Notes

For a richer flavor, use full-fat cream cheese. Serve chilled and enjoy!
