Lemon Loaf

This Lemon Loaf is a moist, tangy, and sweet treat perfect for any time of the day, featuring bright lemon flavors in every bite.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup plain yogurt
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract
  • For the glaze: 1 cup powdered sugar, 2 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat sugar and eggs until pale and fluffy.
  4. Mix in the melted butter, yogurt, lemon juice, lemon zest, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and stir just until combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
  9. For the glaze, whisk powdered sugar and lemon juice together until smooth; drizzle over the cooled loaf.
  10. Allow glaze to set before slicing and serving.

Notes

For extra zest, add poppy seeds to the batter or serve slices with a dollop of whipped cream.
