Comforting homemade lemon chicken soup

Lemon Chicken Soup is a soothing and tangy broth-based dish featuring tender chicken and fresh lemon, perfect for a comforting meal any day.

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 3 large carrots, sliced
  • 3 celery stalks, sliced
  • 6 cups chicken broth
  • 2 cups cooked, shredded chicken breast
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 teaspoons lemon zest
  • 1/2 cup orzo or small pasta (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until softened, about 3 minutes.
  2. Add sliced carrots and celery; cook for another 5 minutes, stirring occasionally.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. If using, add orzo or small pasta, reduce heat to simmer and cook until the pasta is tender, about 8-10 minutes.
  5. Stir in shredded chicken, lemon juice, and lemon zest. Simmer for an additional 5 minutes to blend flavors.
  6. Season with salt and pepper to taste.
  7. Remove from heat and sprinkle with fresh parsley before serving.

Notes

For a richer flavor, add a beaten egg whisked into the soup slowly while stirring to create an egg-lemon broth known as avgolemono.
