  • 1 cup grated Romano cheese
  • 1 cup Italian-seasoned bread crumbs
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, combine the Romano cheese, bread crumbs, and lemon zest.
  3. In another bowl, whisk together the eggs and lemon juice.
  4. Season the chicken breasts with salt and pepper, then dredge each piece in flour, shaking off excess.
  5. Dip the floured chicken into the egg mixture, then coat thoroughly with the Romano and bread crumb mixture.
  6. Heat olive oil in a large oven-safe skillet over medium heat.
  7. Cook the chicken breasts for 3-4 minutes per side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
  9. Garnish with chopped fresh parsley and serve immediately.
