Lemon Bread

This Lemon Bread is a moist and flavorful treat, perfect for a refreshing dessert or snack with a bright citrus twist.

  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ¼ cup sour cream
  • ½ cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the sugar and eggs until light and fluffy.
  4. Mix in the melted butter, sour cream, lemon juice, lemon zest, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Optionally, dust with powdered sugar before serving.

For an extra citrusy flavor, drizzle a lemon glaze made with powdered sugar and lemon juice over the cooled bread.
