Lasagna Soup

Lasagna Soup delivers all the comforting flavors of classic lasagna in a warm, hearty bowl perfect for cozy dinners.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 lasagna noodles, broken into bite-sized pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned.
  2. Add chopped onion and garlic, cooking until softened.
  3. Stir in beef broth, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Bring to a simmer.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Ladle soup into bowls and top each with a spoonful of ricotta, shredded mozzarella, and a sprinkle of Parmesan cheese.
  6. Garnish with fresh basil or parsley if desired and serve hot.

Notes

For an extra creamy texture, stir ricotta cheese directly into the soup before serving or add extra mozzarella for topping.
