This hearty Kielbasa Potato Soup is a comforting and flavorful meal perfect for chilly evenings. Packed with smoked kielbasa, tender potatoes, and savory broth, it’s a simple and satisfying one-pot dish.

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1.5 pounds Yukon Gold potatoes, peeled and cubed
  • 1 cup milk or half-and-half
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add kielbasa and cook until browned, about 5-7 minutes. Remove kielbasa from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and stir in thyme, salt, and pepper. Bring to a boil.
  4. Add potatoes to the pot and cook until tender, about 15-20 minutes.
  5. Return the cooked kielbasa to the pot.
  6. Stir in milk or half-and-half and heat through. Do not boil.
  7. Garnish with fresh parsley before serving.

Notes

For a richer flavor, add a dollop of sour cream or shredded cheddar cheese to each serving.
