Jam donut focaccia is a delightful fusion bread combining the soft, airy texture of focaccia with the sweet fruity joy of jam-filled donuts, perfect for a unique dessert or snack.

  • 3 ½ cups all-purpose flour
  • 2 tsp active dry yeast
  • 1 cup warm milk
  • 2 tbsp sugar
  • 1 tsp salt
  • 3 tbsp olive oil plus extra for drizzling
  • ½ cup strawberry or raspberry jam
  • Powdered sugar for dusting

Instructions

  1. In a small bowl, dissolve yeast in warm milk with a pinch of sugar. Let it activate for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour, sugar, and salt. Add yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 8 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise for 1 hour or until doubled in size.
  4. Preheat the oven to 375°F (190°C). Punch down the dough and roll it out into a rectangle about ½ inch thick.
  5. Cut the dough into 3×3 inch squares. Place a teaspoon of jam in the center of half the squares.
  6. Top each jam-filled square with another square of dough, pressing edges to seal gently but not too firmly to allow steam to expand.
  7. Place the filled focaccia squares on a baking sheet lined with parchment paper. Drizzle lightly with olive oil and let rise for another 20 minutes.
  8. Bake in the preheated oven for 18-22 minutes or until golden and puffed.
  9. Remove from the oven and let cool slightly. Dust with powdered sugar before serving.

Notes

For an extra indulgent treat, serve warm with a dollop of whipped cream or vanilla ice cream on the side.
