This Jalapeno Poppers Nourish Bowl combines spicy stuffed jalapenos with fresh greens and wholesome grains for a flavorful and nourishing meal perfect for any time of day.

  • 6 large jalapenos, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked quinoa
  • 1/4 cup cooked black beans
  • 2 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup corn kernels
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the cream cheese, shredded cheddar, cooked quinoa, black beans, smoked paprika, salt, and pepper until well combined.
  3. Spoon the cheese mixture into each jalapeno half.
  4. Place stuffed jalapenos on a baking sheet and drizzle with olive oil.
  5. Bake for 15-20 minutes until jalapenos are tender and cheese is bubbly and golden.
  6. In a large bowl, toss mixed greens, cherry tomatoes, and corn kernels with a light drizzle of olive oil and a pinch of salt.
  7. Arrange the baked jalapeno poppers on top of the salad bowl.
  8. Garnish with fresh cilantro and serve warm.

Notes

For extra protein, add grilled chicken or tofu to the bowl, or swap black beans for chickpeas for a different twist.
