Jalapeño Cheddar Protein Bagels with Greek Yogurt Salsa

Spicy jalapeño and sharp cheddar cheese come together in these protein-packed bagels, perfectly complemented by a creamy and tangy Greek yogurt salsa for a flavorful and healthy snack or breakfast.

  • 1 1/2 cups whole wheat flour
  • 1/2 cup unflavored protein powder
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup plain Greek yogurt
  • 1 cup shredded sharp cheddar cheese
  • 1-2 fresh jalapeños, seeded and finely chopped
  • 1 egg white, for egg wash
  • For the Greek Yogurt Salsa:
  • 1 cup plain Greek yogurt
  • 1 small tomato, finely diced
  • 1/4 cup red onion, finely diced
  • 1 tbsp fresh cilantro, chopped
  • 1 tsp lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix whole wheat flour, protein powder, baking powder, and salt.
  3. Fold in Greek yogurt, shredded cheddar, and chopped jalapeños until a dough forms.
  4. Divide dough into 6 equal portions and shape each into a bagel by forming a ball and poking a hole through the center.
  5. Place bagels on prepared baking sheet and brush tops lightly with egg white.
  6. Bake for 20-25 minutes or until golden brown and cooked through.
  7. Meanwhile, combine Greek yogurt, tomato, red onion, cilantro, lime juice, salt, and pepper in a bowl; stir well to make the salsa.
  8. Allow bagels to cool slightly before serving with a generous spoonful of Greek yogurt salsa.

Notes

For extra heat, leave some jalapeño seeds in the dough or add a dash of hot sauce to the Greek yogurt salsa.
