This hearty Italian Sausage and Potato Soup is the perfect comfort food for a chilly evening. Packed with savory sausage, tender potatoes, and flavorful broth, it’s a one-pot wonder the whole family will love.

Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups peeled and cubed potatoes (Yukon Gold or Russet)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped kale or spinach
  • Optional: shredded Parmesan cheese, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Break it apart with a spoon as it cooks. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and add the cubed potatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Stir in the chopped kale or spinach during the last 5 minutes of cooking.
  5. Serve hot, garnished with shredded Parmesan cheese if desired.

Notes

For a creamier soup, stir in a splash of heavy cream or half-and-half at the end of cooking. You can also add other vegetables like carrots or celery for added flavor and nutrients.
