A slice of homemade Irish Potato Pie

This Irish Potato Pie is a comforting and rustic dessert with a creamy potato filling and a golden, flaky crust. It’s a surprisingly delicious way to enjoy the humble potato in a sweet treat!

  • 1 1/2 pounds russet potatoes, peeled and quartered
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 box (14.1 ounces) refrigerated pie crusts
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil potatoes in salted water until tender, about 15-20 minutes. Drain well.
  3. In a large bowl, mash the potatoes until smooth.
  4. Add sugar, butter, milk, vanilla extract, cinnamon, and nutmeg to the mashed potatoes. Mix until well combined and creamy.
  5. Line a 9-inch pie dish with one pie crust.
  6. Pour the potato filling into the pie crust.
  7. Top with the second pie crust. Crimp the edges to seal.
  8. Cut slits in the top crust to allow steam to escape.
  9. Brush the top crust with the beaten egg.
  10. Bake for 45-50 minutes, or until the crust is golden brown and the filling is set.
  11. Let cool completely before slicing and serving.

Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra decadent treat.
