  • 1 lb boneless, skinless chicken thighs
  • 1 cup jasmine rice
  • 2 tbsp honey
  • 2 tbsp sriracha sauce
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • Sesame seeds for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the jasmine rice according to package instructions and set aside.
  2. In a bowl, whisk together honey, sriracha sauce, soy sauce, minced garlic, and grated ginger.
  3. Season the chicken thighs with salt and pepper.
  4. Heat olive oil in a skillet over medium-high heat and cook the chicken thighs for 5-6 minutes per side until fully cooked and caramelized.
  5. Pour the honey sriracha sauce over the chicken in the skillet and cook an additional 2-3 minutes, coating the chicken well.
  6. Slice the cooked chicken into strips.
  7. Assemble the bowls by placing rice at the base, then topping with broccoli, shredded carrots, and sliced chicken.
  8. Garnish with green onions and sesame seeds if desired. Serve warm.

Notes

For extra flavor, add a squeeze of lime juice before serving or swap broccoli for steamed snap peas for variation.
