Instructions

  1. In a medium bowl, whisk together the egg yolk, Dijon mustard, and white wine vinegar until smooth.
  2. Slowly drizzle the oil into the mixture while continuously whisking to emulsify the ingredients.
  3. Continue adding the oil gradually, whisking vigorously until the mixture thickens to a creamy consistency.
  4. Season with salt, black pepper, and optional lemon juice to taste.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
