homemade graham crackers

  • 1 ½ cups all-purpose flour
  • 1 cup whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, cold and cubed
  • ⅓ cup honey
  • ¼ cup packed brown sugar
  • ¼ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together honey, brown sugar, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  6. Turn the dough out onto a lightly floured surface and knead a few times until it comes together.
  7. Divide the dough in half. Roll out one half of the dough into a thin rectangle, about 1/8 inch thick.
  8. Use a pizza cutter or knife to cut the dough into desired graham cracker shapes. Prick each cracker several times with a fork.
  9. Carefully transfer the crackers to the prepared baking sheet. Repeat with the remaining dough.
  10. Bake for 12-15 minutes, or until the crackers are lightly golden brown.
  11. Let the crackers cool completely on the baking sheet before serving.

Notes

For extra flavor, sprinkle the graham crackers with cinnamon sugar before baking. Serve with milk, yogurt, or use for s’mores!
