Ingredients

Scale
  • 1/2 cup mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 2 anchovy fillets, minced (optional)
  • 1-2 tablespoons water, to thin (optional)

Instructions

  1. In a medium bowl, whisk together the mayonnaise, Parmesan cheese, lemon juice, olive oil, Dijon mustard, minced garlic, Worcestershire sauce, and black pepper.
  2. If using anchovy fillets, mince them finely and add them to the bowl.
  3. Whisk all ingredients together until well combined and smooth.
  4. If the dressing is too thick, add water, one tablespoon at a time, until desired consistency is reached.
  5. Taste and adjust seasonings as needed.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Serve over your favorite Caesar salad ingredients.

Notes

For a tangier dressing, add a little more lemon juice. You can also add a dash of hot sauce for a spicy kick.
