Hobo Casserole Ground Beef

Hobo Casserole Ground Beef is a hearty and comforting one-pan meal featuring ground beef, potatoes, and vegetables baked together for an easy family dinner.

  • 1 lb ground beef
  • 4 large potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 onion, diced
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add diced onions and cook until translucent.
  3. Add ground beef to the skillet and cook until browned. Season with salt and pepper.
  4. In a large mixing bowl, combine cream of mushroom soup and cream of chicken soup.
  5. In a greased casserole dish, layer half of the sliced potatoes evenly on the bottom.
  6. Spread half of the cooked ground beef and onion mixture over the potatoes.
  7. Spoon half of the soup mixture over the beef layer.
  8. Sprinkle half of the frozen mixed vegetables evenly.
  9. Repeat the layering process with the remaining potatoes, beef mixture, soup, and vegetables.
  10. Cover the casserole with foil and bake for 45 minutes.
  11. Remove foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 15 minutes or until cheese is melted and bubbly.
  12. Let cool for a few minutes before serving.

Notes

For extra flavor, add a teaspoon of garlic powder to the beef mixture or top with chopped fresh parsley before serving.
