These Halloween Whoopie Pies are a spooky and delicious treat, perfect for parties or a fun baking project. Soft, cake-like cookies filled with a sweet and creamy frosting, decorated for the holiday!

  • For the Cookies:
  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup vegetable shortening
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup hot coffee
  • For the Filling:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • Orange and Black food coloring
  • Sprinkles for decoration

Instructions

  1. Make the Cookies: Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, cream together the sugar, butter, and shortening until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Beat until just combined.
  5. Stir in the hot coffee until smooth.
  6. Drop rounded tablespoons of batter onto the prepared baking sheets, leaving space between each cookie.
  7. Bake for 8-10 minutes, or until the cookies spring back when lightly touched.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. Make the Filling: In a large bowl, beat the butter until light and fluffy.
  10. Gradually add the powdered sugar, beating until smooth. Stir in the vanilla extract and milk.
  11. Divide the filling into two bowls. Add orange food coloring to one bowl and black to the other.
  12. Assemble the Whoopie Pies: Spread a generous amount of frosting on the flat side of one cookie. Top with another cookie, flat side down, to form a sandwich.
  13. Roll the edges of the whoopie pies in sprinkles, if desired.
  14. Refrigerate for at least 30 minutes before serving.

Notes

For a richer flavor, use dark chocolate cocoa powder. Store leftover whoopie pies in an airtight container in the refrigerator.
