A flavorful and healthy Ground Turkey Teriyaki Rice Bowl combining tender turkey, savory teriyaki sauce, and fluffy rice for a quick and satisfying meal.

  • 1 lb ground turkey
  • 1 cup jasmine rice
  • 2 cups water
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup green onions, sliced
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 1 tbsp sesame seeds (optional)
  • Salt and pepper to taste
  • Steamed broccoli or mixed vegetables (optional, for serving)

Instructions

  1. Rinse rice under cold water until water runs clear. Combine rice and 2 cups water in a pot, bring to a boil, then reduce to simmer, cover and cook for 15 minutes or until water is absorbed.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the teriyaki sauce.
  3. Heat a large skillet over medium heat. Add ground turkey, season with salt and pepper, and cook until browned and cooked through, about 7-8 minutes. Break meat apart with a spoon as it cooks.
  4. Pour teriyaki sauce over the cooked turkey. Stir and cook for 2 minutes, then add the cornstarch slurry to the skillet to thicken the sauce. Cook another 1-2 minutes until sauce is glossy and thickened.
  5. Fluff the cooked rice and divide it into serving bowls. Top with the teriyaki turkey mixture.
  6. Garnish with sliced green onions and sesame seeds. Serve with steamed broccoli or your choice of vegetables on the side if desired.

Notes

For added crunch and nutrition, top with sliced almonds or serve with a side of steamed edamame.
