  • 1 cup salsa
  • 1 cup corn kernels (fresh or frozen)
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: chopped cilantro, sour cream for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground beef, cumin, chili powder, salt, and pepper; cook until beef is browned and cooked through, about 6-8 minutes.
  3. Drain excess fat, then stir in corn and salsa; cook an additional 2-3 minutes until heated through.
  4. Warm tortillas slightly to make them more pliable.
  5. Spread the beef mixture evenly onto each tortilla and sprinkle with shredded cheddar cheese.
  6. Roll up each tortilla tightly and slice into bite-sized pieces.
  7. Serve warm with optional cilantro and sour cream.
