Greek Healing Soup

A nourishing and flavorful Greek Healing Soup made with wholesome vegetables, herbs, and lemon, perfect for rejuvenation and comfort.

Ingredients

  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 1 cup chopped leeks (white and light green parts)
  • 6 cups vegetable broth
  • 1 cup cooked brown rice
  • 1 cup canned chickpeas, rinsed and drained
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, celery, and leeks, and sauté until softened, about 7 minutes.
  2. Add vegetable broth, dried oregano, and thyme to the pot; bring to a boil.
  3. Reduce heat and simmer for 20 minutes until vegetables are tender.
  4. Stir in cooked brown rice and chickpeas; cook for an additional 5 minutes to heat through.
  5. Season the soup with salt, pepper, and freshly squeezed lemon juice.
  6. Remove from heat and stir in fresh dill and parsley just before serving.

Notes

For added protein, serve with a dollop of Greek yogurt or sprinkle with crumbled feta cheese.
