A luscious grilled cheese sandwich featuring creamy mascarpone, fresh strawberries, and a tangy balsamic glaze, perfect for a sophisticated snack or light meal.

Ingredients

  • 4 slices of brioche or sourdough bread
  • 4 oz mascarpone cheese
  • 1 cup fresh strawberries, sliced
  • 2 tbsp unsalted butter, softened
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey or brown sugar
  • Fresh basil leaves (optional)
  • Pinch of salt

Instructions

  1. In a small saucepan, combine balsamic vinegar and honey (or brown sugar). Simmer over medium heat until reduced by half and syrupy, about 8-10 minutes. Remove from heat and let cool.
  2. Butter one side of each bread slice evenly.
  3. Spread mascarpone cheese on the unbuttered side of two bread slices.
  4. Layer sliced strawberries over the mascarpone, add a pinch of salt, and basil leaves if using.
  5. Top with the remaining bread slices, buttered side out.
  6. Heat a skillet over medium heat and grill sandwiches for 3-4 minutes per side or until bread is golden brown and cheese is warm.
  7. Remove from skillet, slice in half, and drizzle generously with the balsamic glaze before serving.

Notes

For extra flavor, add a sprinkle of freshly ground black pepper or swap strawberries for ripe peaches in summer.
