  • 1 pound mini sweet peppers, assorted colors
  • 4 ounces goat cheese, softened
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Halve the mini peppers lengthwise and remove the seeds.
  3. In a medium bowl, combine the softened goat cheese, chives, dill, garlic, olive oil, salt, and pepper. Mix well until fully combined.
  4. Spoon the goat cheese mixture into each pepper half, filling them generously.
  5. Place the stuffed peppers on a baking sheet.
  6. Bake for 15-20 minutes, or until the peppers are slightly softened and the goat cheese is warmed through.
