Ginger Scallion Chicken Noodle Soup

This comforting Ginger Scallion Chicken Noodle Soup combines fragrant ginger and fresh scallions with tender chicken and noodles for a warming, flavorful meal perfect for any day.

Ingredients

  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2-inch piece of fresh ginger, peeled and sliced
  • 4 scallions, sliced separately (white and green parts)
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 4 ounces rice noodles or egg noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add garlic, ginger slices, and the white parts of the scallions; sauté until fragrant, about 2 minutes.
  2. Add the chicken broth and bring to a boil.
  3. Add the shredded chicken, soy sauce, and noodles. Cook noodles according to package instructions until tender.
  4. Stir in sesame oil and season with salt and pepper to taste.
  5. Remove ginger slices before serving.
  6. Garnish with the green parts of the scallions and fresh cilantro if desired. Serve hot.

Notes

For extra depth, simmer the broth with a few star anise pods or add a splash of lime juice just before serving.
