German Potato Soup

This hearty German Potato Soup is a creamy and comforting dish, perfect for a cold day. Made with simple ingredients like potatoes, onions, and broth, it’s a flavorful and satisfying meal.

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 ½ pounds Yukon gold potatoes, peeled and cubed
  • 1 teaspoon dried marjoram
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup milk
  • ¼ cup chopped fresh parsley, for garnish
  • Bacon crumbles (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth and add potatoes, marjoram, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  3. Use an immersion blender to partially blend the soup until slightly thickened, leaving some chunks of potato for texture. Alternatively, carefully transfer half of the soup to a regular blender and blend until smooth, then return it to the pot.
  4. Stir in milk and heat through. Do not boil.
  5. Ladle into bowls and garnish with fresh parsley and bacon crumbles, if desired.

Notes

For a richer flavor, use homemade chicken broth. You can also add a dollop of sour cream or plain yogurt to each bowl before serving.
