Georgia cracker salad

Georgia cracker salad is a crisp and refreshing Southern side dish featuring layered crackers, fresh tomatoes, onions, and a tangy mayonnaise dressing, perfect for warm-weather meals.

Ingredients

  • 2 cups saltine crackers
  • 2 large ripe tomatoes, sliced
  • 1 medium onion, thinly sliced
  • 1 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • Salt and freshly ground black pepper, to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  1. In a small bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
  2. In a serving dish, place a layer of saltine crackers.
  3. Top crackers evenly with sliced tomatoes and onions.
  4. Spread a layer of the mayonnaise dressing over the tomatoes and onions.
  5. Repeat layers (crackers, tomatoes, onions, dressing) until ingredients are used, finishing with a dressing layer.
  6. Cover and refrigerate for at least 1 hour to allow flavors to meld and crackers to soften slightly.
  7. Garnish with fresh parsley before serving, if desired.

Notes

For a twist, try adding chopped bell peppers or a dash of hot sauce to the dressing for extra flavor.
