This creamy Garlic Cheddar Potato Soup is pure comfort food! Packed with savory garlic and cheesy cheddar, it’s the perfect warm and satisfying meal for a chilly day.

Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 4 cups Yukon gold potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, bacon bits

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and onion and cook until softened, about 5 minutes.
  2. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Using an immersion blender, blend the soup until smooth (or carefully transfer to a regular blender).
  4. Return the soup to the pot. Stir in milk and cheddar cheese until cheese is melted and soup is heated through.
  5. Stir in sour cream. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions and bacon bits, if desired.

Notes

For a richer flavor, use cream instead of milk. You can also add other vegetables like carrots or celery.
