fudgy Grasshopper Cookies

Delight in these fudgy Grasshopper Cookies, combining rich chocolate with a refreshing minty twist for an irresistible dessert treat.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup crushed peppermint candy or peppermint chips
  • ½ cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing thoroughly.
  4. Sift in cocoa powder, flour, baking powder, and salt; mix until just combined.
  5. Fold in crushed peppermint candy and mini chocolate chips evenly.
  6. Drop tablespoon-sized dough balls onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10–12 minutes until edges are set but centers remain soft.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra minty kick, drizzle melted white chocolate over cooled cookies or serve with a glass of cold milk.
