Frito Cowboy Cabbage is a hearty and flavorful skillet dish combining tender cabbage with crunchy Fritos and smoky seasonings, perfect for a quick Southwestern-inspired meal.

  • 1 medium head green cabbage, chopped
  • 1 cup Fritos corn chips, slightly crushed
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup diced red bell pepper
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • Salt and black pepper, to taste
  • 1/4 cup fresh cilantro, chopped (optional)
  • Juice of 1 lime

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and red bell pepper, sauté for 4–5 minutes until softened.
  3. Stir in the minced garlic, ground cumin, smoked paprika, and chili powder; cook for 1 minute until fragrant.
  4. Add the chopped cabbage to the skillet and cook, stirring frequently, for about 8–10 minutes until the cabbage is tender but still slightly crisp.
  5. Season with salt and black pepper to taste.
  6. Remove from heat and gently fold in the crushed Fritos to maintain their crunch.
  7. Sprinkle with fresh cilantro and drizzle lime juice over the top before serving.

Notes

For added protein, serve with grilled chicken or black beans. For a spicy kick, add chopped jalapeños while sautéing the vegetables.
