A moist and tender flourless yogurt cake that is naturally gluten-free, simple to prepare, and perfect for a healthy dessert or snack.

  • 1 cup Greek yogurt (full fat)
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Zest of 1 lemon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan or line with parchment paper.
  2. In a large bowl, whisk the eggs and sugar until pale and fluffy.
  3. Add the Greek yogurt, vanilla extract, and lemon zest, mixing until well combined.
  4. Sprinkle the baking soda over the mixture and gently fold it in.
  5. Pour the batter into the prepared pan and smooth the surface.
  6. Bake for 35 to 40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool completely before removing from the pan.
  8. Dust with powdered sugar before serving if desired.
