Filipino Chicken Adobo is a savory, tangy stew featuring tender chicken simmered in vinegar, soy sauce, garlic, and aromatic spices, delivering a classic taste of Filipino comfort food.

  • 2 lbs bone-in chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 head garlic, peeled and minced
  • 1 medium onion, sliced
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 1 cup water
  • 2 tbsp cooking oil
  • 1 tbsp brown sugar (optional)
  • Salt to taste

Instructions

  1. Heat cooking oil in a large skillet over medium heat. Sauté garlic and onion until fragrant and translucent.
  2. Add chicken thighs and brown on all sides, about 5 minutes.
  3. Pour in soy sauce, vinegar, and water. Add bay leaves, peppercorns, and brown sugar if using.
  4. Bring to a boil, then lower heat to simmer. Cover and cook for 30-40 minutes until chicken is tender.
  5. Remove the lid and continue cooking until sauce reduces and thickens slightly, about 10 minutes.
  6. Adjust salt to taste. Serve hot with steamed rice.

Notes

For extra depth, marinate the chicken in soy sauce, vinegar, and garlic for at least 1 hour before cooking. Serve with steamed jasmine rice and a side of sautéed greens.
