Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/3 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/3 cup dried mixed fruit
  • 1/4 cup chopped walnuts (optional)
  • 3 oz dark chocolate
  • 2 tablespoons heavy cream
  • Edible glitter or festive sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a mini muffin tin or line with paper cups.
  2. In a bowl, sift together flour, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing just until combined.
  5. Fold in the dried mixed fruit and walnuts (if using).
  6. Divide the batter evenly among the mini muffin cups, filling each about 3/4 full.
  7. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and allow to cool completely on a wire rack.
  9. Prepare the ganache by heating the heavy cream until just simmering and pouring it over chopped dark chocolate. Let stand for 2 minutes, then stir until smooth and glossy.
  10. Dip the tops of each cooled mini cake into the ganache or spoon ganache over the top.
  11. Decorate with edible glitter or festive sprinkles if desired. Let ganache set before serving.

Notes

For a boozy twist, soak the dried fruit in rum overnight before baking. These mini cakes also pair beautifully with a cup of spiced tea or mulled wine.
