Chicken Stew

A hearty and comforting chicken stew made with tender chicken, fresh vegetables, and a flavorful broth, perfect for cozy dinners.

  • 1 lb chicken thighs, boneless and skinless, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour
  • ¼ cup fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chicken chunks and brown on all sides, about 5 minutes. Remove and set aside.
  2. In the same pot, add chopped onion and garlic; sauté until softened, about 3 minutes.
  3. Add carrots, celery, and potatoes to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Sprinkle flour over the vegetables and stir well to coat. Cook for 2 minutes to remove the raw flour taste.
  5. Gradually pour in chicken broth while stirring to avoid lumps, then add browned chicken back to the pot.
  6. Add thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat to low and simmer uncovered for 30 minutes or until vegetables are tender and chicken is cooked through.
  7. Stir in frozen peas and cook for an additional 5 minutes. Adjust seasoning if needed.
  8. Garnish with fresh parsley before serving if desired. Serve hot.

Notes

For extra richness, add a splash of cream before serving or serve with crusty bread for dipping.
