  • 6 medium apples (such as Granny Smith, Honeycrisp, or Gala), peeled, cored, and sliced
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons lemon juice
  • For the Caramel Sauce:
  • ½ cup granulated sugar
  • ¼ cup heavy cream
  • 2 tablespoons unsalted butter
  • ¼ teaspoon salt
  • For the Crumble Topping:
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ cup (1 stick) cold unsalted butter, cubed
  • ½ cup rolled oats

Instructions

  1. Make the Crust: In a large bowl, whisk together the flour, sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Make the Filling: In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat.
  3. Make the Caramel Sauce: In a saucepan over medium heat, melt the sugar until it’s a golden amber color. Carefully whisk in the heavy cream, butter, and salt. Cook, stirring constantly, until smooth. Remove from heat.
  4. Make the Crumble Topping: In a medium bowl, combine the flour, brown sugar, and oats. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Assemble the Pie: On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a 9-inch pie dish. Trim and crimp the edges.
  6. Pour the apple filling into the pie crust. Drizzle about half of the caramel sauce over the apples. Sprinkle the crumble topping evenly over the apples.
  7. Bake: Bake in a preheated oven at 375°F (190°C) for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Let the pie cool completely before slicing and serving. Drizzle with the remaining caramel sauce before serving.
